Easy Brownies!

Last week, we had brownies & cookies-n-cream ice cream at Gramps house,        
while working on this fun train puzzle. 
Don't know why, but a few people have asked for "my" brownie recipe.  
This makes me laugh, because I am a corner cutter with brownies, 
as with everything else when cooking or baking for a crowd! 
Here's the complicated recipe. Ready?

Buy a Pillsbury Fudge Brownie Mix,
 Family Size for a 9 x 13 pan. 
Follow box directions 
EXCEPT....
substitute 1/2 cup of melted butter for the 1/2 cup of oil. 
 
That's it, though much of the time I pour in one half of a bag of white chocolate chips, chocolate chips, peanut butter chips,  M & M's or Reeses Pieces!  Ok, not a big deal, but seems to make enough difference that people notice, especially us butter lovers.

We eat with Gramps a few times a week and to keep him happy,
we use disposable products.  No dishwasher!
We are supposed to keep him from getting too stressed since his
subdural hematoma, so disposable it is! :-)



We like our two new cats alot, but we sure miss our Kitter Boy, who we lost in February.  He grew up with Drew and was almost 18, so it was sure hard to say good bye!  His favorite thing was that cheese in the can.  The minute he saw it or heard it, he was always all over Better Half!

Cream Italian Chicken
& Saucy Meatballs with pasta
 
 2 pounds of boneless chicken breasts
8 ounces Italian Dressing (liquid)
1 can of cream of chicken soup
1 eight ounce package of cream cheese
8 ounces of shredded white cheese, like parmesan, romano or mozzerella
 
Pleace first 4 ingredients in 5 quart crock pot on low for 6-8 hours.  Stir well, when chicken is thoroughly cooked through.  Add cheese and cook for another hour on low, covered just serve cheese on top if preferred.
Serve over pasta.
 
1 package of frozen meatballs
1 jar of pasta/spaghetti sauce
1 jar of pizza sauce
Cheese of choice
Cook on low in crock pot for 3-4 hours, or in oven
 for an hour at 350 degrees, and serve over pasta, 
sprinkling with cheese when serving.
 


Meatballs in Gravy, Ranch Potatoes,
Green Beans and Rolls
An easy meal for a group of 50 or 100. 
Just multiply! :-)

Easy Meatballs
1 package of frozen homestyle meatballs
1 jar or can of beef gravy
1 jar or can of chicken gravy
Add 1 can of cream of chicken or celery soup or a bit of evaporated milk, if you want even more gravy. Heat on low in crock pot for 3 hours or so, or in oven for an hour at 350.          5-6 servings

Ranch Potatoes
1 bag of cubed hashbrowns
1 eight ounce package of cream cheese
1/4 stick of butter
1 can of cream of potato soup
8 ounces of sour cream
1 packet of ranch dressing powder

Spray an 8 x 12 or 9 x 13 pan with Pam.  Place hash browns in pan and let thaw in the fridge for 24 hours, covered.  Heat cream cheese and butter in microwave until soft.  Mix in soup, cream and ranch powder.  Pour onto hash browns and mix well.  Bake for about 50-60 minutes at 350 degrees.  Can sprinkle cheese on top for the last 5 minutes, if desired.
8-10 servings

Simple Chicken ala King on French Bread

Place 2 pounds boneless chicken breasts in 5 quart crock pot. Add 8 ounces chicken broth.  Cook on low for 5-6 hours till falling apart and cooked through.  Add 2 cans cream of chicken soup and 1 or 2 cans drained peas and carrots. 
Season to your liking.
Cook, covered for an hour more or until heated through.
Serve with biscuits, croissants, french bread, rice, noodles or mashed potatoes.

Slow Cooker Rotisserie-Flavored Chicken Sandwiches 

Excuse the photo for now.  The sandwich on the left is the recipe below. Drew and I have to share plates some days when we have so many for supper at the church. This is a simple recipe I threw together one day. We've been making it so often over the last few years because I get asked over and over how to make it.  Make it how it works for you.  We are all about simple here. It works well plain or in so many things!  Hope you like it.

3 pounds of chicken breasts or tenderloins
1-2 cups of chicken broth
1 stick of butter
Rotisserie Spice

Place chicken and broth in crock pot.  Sprinkle with Spice.
After 6-8 hours on low, chicken should be falling apart and easy to shred with forks.  Add butter and more spice for your taste and a bit more broth, if needed.  Heat through, for at least 30-60 minutes more, covered in crock pot.  Can also place chicken in boiling water on the stove top, cook till falling apart and then add broth, butter and spice. Serve on buns, with BBQ sauce and Mayo on the side.  The Rotisserie Spice is not always easy to find.  Here in the North, I can find it at
Walmart, Sam's Club,
Rainbow Foods, Lunds & Restaurant Depot Supply.
